Chipotle Chili Peppers are large jalapenos smoked over a natural wood fire until they are dried and permeated with a deep smoky, sweet flavor. It is smoky and sweet in flavor with tobacco and chocolate tones, a brazil nut finish and a subtle, deep, rounded heat. Chipotles are used primarily in Mexican and Tex-Mex cuisines. At the end of the growing season, the mature jalapenos have fully ripened turning a brilliant red and there is a large and growing market for freshly picked, ripe red jalapenos in both the U.S. and Mexico. The mature jalapenos are left on the bush for as long as possible and it is only once they have gotten deep red in color and have lost much of their moisture, that they are then harvested to be transformed into chipotles. The best quality chipotle is the Chile Meco which is stiff, tan and is best described as looking like a cigar butt. Chipotles have medium heat at 5,000 to 10,000 SHU (Scoville Heat Units).
